FATTOUSH
1 large cucumber, chopped
5 tomatoes, chopped
10 scallions, chopped
1 Tbsp chopped parsley
1 Tbsp chopped coriander leaves (optional)
1/2 Tbsp chopped fresh mint
1 clove garlic, crushed
6 Tbsp olive oil
Juice of 2 lemons
1/2 tsp salt
1/4 tsp black pepper
2 pitas, toasted and broken into small pieces
Prepare all the vegetables and be sure herbs are chopped very fine. Toss
together all (except pita), chill. At the last minute, stir in the pitas. Serves 5-6. |
